Since tomorrow is the first day of Spring we thought you might like this delicious recipe.
Ingredients:1- 9 inch unbaked pie crust
3 Green Onions
2 Tablespoons Canola Oil
1 Cup sliced mushrooms (optional)
1- 10 ounce box frozen (thawed) and drained spinach
4 eggs
2 Cups half-and-half
Salt
1/3 teaspoon black pepper
1 Cup Shredded Cheddar Cheese (or Swiss Cheese-depending on your preference)
Directions:Preheat oven to 425 degrees. Fit pie crust into a 9 inch pie plate. Bake for 10 minutes or until golden brown. If crust bubbles gently press down. In a medium skillet, cook green onions in oil for 5 minutes or until soft. Add spinach and cook 2 for 2 minutes. Set aside. In a large bowl, beat eggs and half-and-half as well as salt and pepper. Spoon spinach mixture into crust and sprinkle with cheese. Reduce oven temperature to 325 and bake for 50 minutes or until knife inserted into the center of tart comes out clean.

310 Cal, 17g carbs, 22g fat, 130 Milligrams cholesterol, 350 mg sodium, 2 g fiber
*Note-Spinach needs to be drained really good, otherwise it is watery.
